VINIFICATION: Once pressed, the must is stored for 24-36 hours at cold temperature. After being decanted, the wine goes through the alcoholic fermentation which occurs at the controlled temperature of 17-18° C. The second fermentation takes place in small tanks, where it is refined for 4 months and ,afterwards, in the bottle for 3 months at least before being released.
ORGANOLEPTIC CHARACTERISTICS: Dom Domi has a crystal clear straw yellow colour with greenish tinges, a fine perlage and a persistent mousse.
On the nose it has a light floral bouquet with hints of acacia flowers and armonic and fruity apple scents.
On the palate is round and equilibrate, with a pleasing increasingly carbonic feel.
FOOD PAIRING: Great as aperitif, it gives its best with appetizers and fish-based dishes. So well-balanced, it matches perfectly with cream and custard desserts.
SERVING TEMPERATURE: 6-8° C.
