VINIFICATION: After the crushing and de-stemming process, the grapes go through a brief maceration on the skins for about 1-2 hours and then are pressed. The must is stored for 24-36 hours at cool temperature and decanted. The wine goes through a first fermentation (alcoholic) which occurs at the controlled temperature of 16° C and then through a second fermentation (malolactic) at 50%.
ORGANOLEPTIC CHARACTERISTICS: Friulano Villa Caratti has a pale straw yellow colour with greenish hints. With a great aromatic bouquet, on the nose it is reminiscent of wild flowers and has a definite note of yellow pulp fruit, such as peaches and sweet apricots. Fragrant and pleasant on the palate, it is balanced and ample, with a light finish of bitter almond.
FOOD PAIRING: It matches well with light appetizers, soups, risotto, fish or egg based dishes.
SERVING TEMPERATURE: 10-12° C.
