VINIFICATION: Picked when overripe, the grapes are de-stemmed, macerated and fermented at controlled temperature for 8-12 days in vertical vats. Once racked off and pressed, the wine is decanted in stainless steel tanks (60%) and in Slavonian oak barrels (40%).
ORGANOLEPTIC CHARACTERISTICS: Merlot Villa Caratti is a fine wine of an intense ruby red with purplish highlights. Intense and spicy, has a pleasant scent of wild berries. Dry on the palate, it is well balanced in softness, giving mellow aromas.
FOOD PAIRING: It matches with white meat, light red meat, savoured main courses and oily fishes.
SERVING TEMPERATURE: 18-20° C.
